Baking with Aunt Suzie

Today was a baking extravaganza day with my Aunt Suzie. She was at a homemaking baking demonstation where they used a product called Soy Liquid Lecithin:This junk is AMAZING! It replaces oil in baking certain things. Seriously this stuff is like super glue a $7 bottle of this will last 2 years if you make 2 loafs every week! And it has less calories and it also has a much longer shelf life and is cheaper than oil! Need I say more??? Are you sold on this stuff yet?? NO? Well then let me continue... You can be done baking start to finish in as little time as 1 hour! It will take no more than 25 minutes to rise and no more than 25 minutes to bake. You are probably thinking that is alright but maybe you don't want to make bread... well let me continue. I have over 50 recipes I can make that are delicious using this, and you can make much more than 50 dishes because you can do so many different things with each dish. Don't believe me? Well have a look at this....

First we decided to keep it simple and just make bread (total cost of ingredients ~36 cents per loaf):
Nice looking bread and it tasted great also. Next Aunt Suzie and I thought we would be a little more adventuresome. And BOY DID IT PAY OFF:
Yes, yes I did make this ALL by my self. And it was pretty easy. Doesn't it look FANTASTIC, oh just wait till you see inside:
This was really delicious, it has chicken brocolli, onion, cheese and cream of chicken soup, and seasoning salt and it is sooooo goood. I will be making this again! Next we decided to go for a nice breakfast (by the way the dough in all these recipes is one loaf worth) and takes no longer than 25 mintues to bake usually less and some you let rise no more than 25 mintues and some you just pop in the oven:
These were yummy cinnamon rolls. Are starting to believe how incredible this all is?? No??? well then take a look at THIS:
This is filled with cream cheese filling, apple pie fillin, some pecans, cinnamon and topped with cinnamon and sugar, and it is to die for, and yes I made this one as well! If you would like to find out more about this stuff or the simple recipes to make these let me know. This is what Jack did from 10-3 he played his little heart out:

This was our fun "girls day" together, so now its my turn to think of something fun we can do, any ideas?

Tummy Time is Hard Work

2 days ago I was forcing Jack to do a little tummy time, I say force because it is not always the most pleasent task and usually involves a good amount of screaming. But this time it went a little different, after a couple minutes this happened twice......

4 month checkup

Today I took Jack for his 4 month checkup and shots. He now weighs 15 pounds 4 ounces and is in the 60% for weight, and is 24 inches tall, the 16% for height. The doc said he is no basketball player but he is getting there, still a little squatty body apparently, although if you see the kid you wont believe he is "short". Everything looks great he has some cradle cap and thanks to martin and miller genetics some eczema, so I get to put on .5% hydrocortisone cream on his head, 1% hydrocortisone cream on his body where the eczema is and lather on the thick expensive eucerine cream all over. He did the practice sitting up and said he has excellent neck control and is doing great with sitting up and building up those muscles, he also laughed and said he should sit pretty well because he has a large base lol. I told him I started feeding him rice cereal and he asked if I was using a spoon I said yes, apparenty that is a good thing so they start learning how to control their tongues and mouths, he said well now that he has got the hang of it you can start feeding him baby food, and of course only feed one food at a time for a bit and only do fruits and divide them in colors and once he has that down start with vegis. I am glad I decided to just spoon feed him even if it is a little messier and a little more time consuming. He told me it is never to early to start reading to him I said Oh I do read to him a lot, then he said that it doesn't have to be baby books and I laughed and told him how he is learning all about business and economics with dad. Then Jack got some shots and the yummy rotavirus junk, boy he really knows how to push out that lower lip. Apparently the shots were pretty traumatizing because he has been snoozing a ton this afternoon. Its really rough being such a little guy. I just keep thinking how blessed we have been that Jack has not been sick all winter, so very very blessed. The doc said it isnt a bad idea to stay a bit antisocial, so we will be although we are quite a bit more social than we used to be.

Sweet Dreams

Last night was glorious. it was fantastic, it was amazing, it was sweet, it was nearly sinful. The first full night of sleep since the little bundle we call Jack was born! on his 4 month anniversary/birthday whatever you want to call it. So cross your fingers and toes that he keeps this up tonight as well!!!!! Also last sunday (the sunday before superbowl sunday) Jack rolled over twice! I guess he was just the right amount of mad to give him the momentum to roll over, because he hasn't done it since.
