Oh How I Have Missed You:

Today was an epic day in my life. Ever since we moved to Idaho some 6 months ago I've felt a pit of loneliness, a black hole, if you will, in my heart and my stomach. Something was missing. I could hear a faint echo of something calling my name. Oh Cafe Rio, HOW I HAVE MISSED YOU! Today was the grand opening in Idaho Falls, an event we simply couldn't miss. Thank Heavens we got there and the line was short, it still took forever to get through the line because they are training people and the newbies were a bit shaky and nervous. By the time I paid the line was out the door. Some might find that ridiculous, can it really be worth it? Yes, yes absolutely it is.

MMM...I am so jealous I miss Cafe Rio so so much!! I wish they would build one in Laramie. I am for sure going there when I go to Provo!!

I had another friend in IF go on opening night too. We ate there on Friday too, but you know, we do every Friday night...now you can too!

T that's super exciting! Hey speaking of food, here is my Chocolate Eclair recipe I told i would email you like five months ago! Sorry it took so long, but I decided just to put it on your post becuase it was easier!

Chocolate Eclairs

Dough:
½ c. butter or margarine
1 c. water
1 c. flour
¼ t. salt
4 eggs

In a saucepan, combine butter and water. Bring to a rapid boil, stirring until butter melts. Reduce heat to low; add flour and salt. Stir vigorously until mixture leaves side of pan and forms a stiff ball. Remove from heat. Add eggs one at a time, beating well after each addition. With plastic bowl scraper and spoon, make 4 x 1 ½ inch strips on greased cookie sheet. Bake at 450 degrees for 15 minutes. Reduce heat to 325 degrees and bake for 20 minutes longer. Cool on wire rack.

Filling:
1 pkg (5.1 oz) instant chocolate or vanilla pudding
2 c. cold milk
1 c. whipping cream (or 8 oz cool whip or dream whip)
¼ c. powdered sugar
1 t. vanilla

Combine pudding mix and milk. In another bowl, whip cream until soft peaks form. Beat in sugar and vanilla (don’t need sugar and vanilla if you use cool whip or dream whip). Fold into pudding. Slice shells in half and fill with pudding mixture.

Icing:
2 (1 oz) squares semi sweet chocolate (or chocolate chips)
2 T. butter or margarine
1 c. powdered sugar
2-3 T. hot water

Melt chocolate and butter in a saucepan over low heat. Stir in sugar. Add hot water until icing is smooth and reaches desired consistency. Spread over éclairs. Chill until served.

This is super tasty and delicious and not terribly hard to make! Hope you like it, let me know how it goes!
